Baking in foil allows you to cook without adding fat.Place the fish, which has been cleaned and washed, on a sheet of aluminium foil, then close it and place it in the oven to bake. In this way, the fish does leak its juices during cooking.

Preparation
Gut and scale the Meagre, add salt, pepper, a clove of garlic cut into slices and a sprig of parsley. Sprinkle salt and pepper on a sheet of aluminium, place the Meagre on top with the halved cherry tomatoes, a clove of garlic cut into very thin slices, the Taggiasca olives and the capers. Add a drizzle of extra virgin olive oil on the fish and add ¼ glass of white wine. Seal the foil and bake at 180° C for 18 minutes. Then take it out of the oven, bone it and serve with the tomatoes and the cooking sauce.
